For years Spindletop was one of the most iconic dining destinations in Houston. Perched atop the Hyatt Regency 31 stories in the sky, the revolving restaurant offered unparalleled 360 sights of the city. Following its closure during the pandemic, the revolving restaurant is set to reopen six years later, offering an updated menu and dining service in the downtown Houston skyline.
Named after the famed 1901 oil gusher, Spindletop originally opened at the Hyatt Regency in 1972. The long-running Gulf Coast restaurant provided a romantic destination 31 stories in the sky – setting the scene for many special occasions and milestones. Though there have been other rotating concepts throughout Houston history, Spindletop was far and away the most iconic.

Spindletop closed in the wake of the pandemic. Since then, the restaurant has been exclusively open for private events. Previously, the restaurant experienced a two-year closure in the aftermath of Hurricane Ike. However, as reported by CHRON, Spindletop in Houston will officially reopen on May 15, 2026.
According to CHRON, Spindletop will reopen this May under the culinary leadership of Executive Chef Hernan Melendez. Having been the Executive Chef at the Hyatt Regency the past two years, Melendez was previously the Executive Chef of Carmel Valley Ranch in California and Chef De Cuisine at the Ritz-Carlton in Lake Tahoe.
While details are still relatively scarce, the restaurant will reopen with a weekly four-course prix fixe tasting menu on Friday and Saturday evenings only.

“After closing during the COVID‑19 pandemic, Spindletop is reopening under the direction of Executive Chef Hernan Melendez, featuring a weekly four‑course prix fixe tasting menu and its signature 360‑degree rotating views of Houston, completing one full rotation every 45 minutes,” officials stated in a release, as reported by CHRON.
Spindletop is slated to reopen at the Hyatt Regency at 1200 Louisiana St. on Friday, May 15. Reservations are presently available via TOCK.com. Walk-ins are not available.
