The Second Edition of the Texas Michelin Guide is in. While, for many it seems, the Michelin Guide failed to properly give Houston restaurants their due, the newly update guide did solidify Houston as the premier foodie city in Texas – holding more Michelin awards than any city in the state. On the Texas Michelin Guide, is Rosemeyer Bar-B-Q in Spring.
Earning a Bib Gourmand on the inaugural Texas Michelin Guide, Rosemeyer Bar-B-Q is a food trailer off the highway parked outside a gas station at 2111 Riley Fuzzel Rd in Spring. With tree-covered picnic tables spread across the parking lot, the barbecue joint is outdoor dining only with a classic setup of a walk-up service counter – giving diners the impression of a sort of backyard cookout.

Rosemeyer Bar-B-Q is a concept created by childhood friends, Jordan Rosemeyer, and Ben Maxwell, who started the barbecue trailer in 2018 as a way to have fun cooking on weekends. In its early days, both of them had to continue their day jobs to keep up with rent. As recently as 2023, the two were still uncertain about the future of their barbecue project, as expressed in a candid interview with Texas Monthly.
“We’re trying to get people to know who we are,” Rosemeyer told the publication, “so we don’t have to go back to real jobs“.
Now, it’s safe to say that they are in the know – at least by those who know barbecue. Not only by Texas Monthly, who featured Rosemeyer Bar-B-Q on its long-anticipated “50 Best BBQ in Texas” list, but by the Michelin Guide. In 2024, Michelin awarded Rosemeyer Bar-B-Q with a Bib Gourmand, lauding the venue’s smoked brisket, jalapeño-cheese sausages, and pork ribs. Here’s what Michelin had to say:

“There’s no dining room in sight but there are picnic tables. Most importantly, there is great barbecue – and a lot of it. Beautifully smoked brisket takes top billing, but tender pork ribs and snappy, jalapeno-cheese sausages are must-orders as well”.
The barbecue truck is open for just three days of the week – Thursday, Friday, and Saturday, opening at 11 am and running until 3 pm (or when they sell out). As with other hot barbecue joints in Houston, we recommend showing up early ahead of the lines. Though, those who wait will be rewarded not only with a free beer while they wait, but incredible Central Texas-style barbecue. Impatient ones can order ahead of time and arrange a pick-up.
