Bourbon Frosted Flakes And Bone Marrow, See What’s Behind The Bar At This Wildly Inventive Cocktail Lab In Houston

Libations outside your wildest imagination.

Margaritas, Gin and Tonics, Mai Tais – we love ’em, heaven knows, but sometime curiosity has us looking for something completely out of the box; or at Diversión for instance, inside the bowl. Ever wanted to spice up your breakfast? Well they have a bowl of Frosted Flakes topped with bourbon and cognac-infused milk. But that’s just a starter, see what else the chemists of Diversión have brewing in their laboratory of spirits. [Featured image: @diversioncocktails]

Located in Spring Branch, Diversión uses an inventory of scratch made ingredient, down to every tincture, bitter, and liqueur – all made of fresh herbs and produce sourced from local Texas farms.

On the menu at Diversión is a wild array of re-imagined cocktails found nowhere else in the City of Houston. Options include their Cereal Milk – a bowl of Frosted Flakes with Cognac, Bourbon, milk, coriander, and vanilla ($25) ; the Day at the Beach – a tiki-inspired cocktail mixed with dark Rum, gin, Texas Peach Cordial, House Crème de Tarragon, all inside an edible chocolate mug ($30); and Bone Marrow – edible orbs with tequila, Texas Winter Citrus Bitters, Fresno Pepper Tincture from our farm, and bone marrow with Texas Cara Cara Marmalade ($35).

Or, get into the cinema spirit with their Movie Night, a libation concocted with Sercial Madeira, Cognac, Texas Winter Citrus Bitters, Atkinson Farm Texas Strawberry served with a side of popcorn ($30). If you’re feeling more traditional, Diversión also offers a variety of Farm to Cocktail drinks, as well as beer, saké, cider, and wines.

If popcorn isn’t enough, Diversión also serves Spanish-style pintxos, small dishes similar to tapas. Their pintxo menu includes Braised Short Ribs, White Asparagus, Seafood Conserva, Scotch Eggs, and Catalonian Fish Sticks.

Visitors can make reservations via the bar’s website. When you’re ready to order, just spin their lightbulb – you’ll know it when you see it!
