For whatever reason, chicken & waffles — much like oatmeal raisin cookies, and Hawaiian pizza — draw the ire of traditional tastemakers. Something about combining salty and sweet flavors, to these people, is akin to heresy. Try as it might, cancel culture isn’t claiming this flavor fusion anytime soon. Their menu, and Instagram feed for that matter, are what you might classify under the “Food Porn” category. See their Buttermilk Fried Chicken & Waffle Sandwich, which stacks slabs of fried chicken between two waffle “buns”. Patrons can choose between an array of sauces that include spicy mayo, ancho chile honey butter, thunder sauce, buffalo ranch, honey mustard, and BBQ. For an extra buck, patrons can make it deluxe with lettuce, tomato, onions, and pickle add-ons.
But that’s just their signature. One would need more than one highlighter to underscore the eatery’s stand-out features. In keeping with their namesake, The Waffle Bus offers an assortment of breakfast-dinner infusions that would turn a traditional menu upside down. Other features include their Waffle Bacon Cheeseburger composed off 1/3 lb black angus burger patty, American cheese, and other toppings. For my breakfast brethren, the bus also offers a Breakfast Waffle Sandwich, which includes sausage, bacon, egg, cheese, and spicy mayo.
For those palates that lean on the savory side of things, the bus also offers hot chicken sandwiches topped off with globs of gooey mac & cheese – these Mac Daddys are fit with two normal bread-based buns. Conversely, The Waffle Bus offers a series of “Fryders” – that is, sliders fit with two waffle fry buns. Options here include Chicken and Waffle Fryders, Cheeseburger Fryders, and Breakfast Fryders.
Other menu options include wing combos, fry options – their Chicken Thunder Fries and Thunder Fries being the hitters, sweet waffle sandwiches, and milk & cereal.
